Do not peel the cucumbers, wash, wipe dry, slice as thinly as possible using a special grater with a blade. Put into a sieve, dust with salt, stir, leave to sweat for 30 minutes. Rinse with cold water, drain, wipe dry. Put the cucumbers into a salad bowl with the chopped tarragon leaves, pepper, add the lemon juice, stir. Add the cream, one tablespoon at at time, stir. Chill.
